Vineyards From the 50 hectares of Sangiovese vineyards, located in the heart of the community and cultivated with organic methods, only the best grapes are chosen for making Avi. Vineyard management operations are all done by the young residents of the community, from pruning to crop thinning (which limits average yield per vine to about 1 kg).
Harvest In September when the grapes are perfectly ripe. Further bunch sorting in the cellar ensures that only the best go on to begin fermentation.
Winemaking The Avi winemaking process is geared to preserving the special qualities and typicality of a vine we particularly cherish. Malolactic completely done. Ageing In large oak barrels for the right time to its appropriate maturation. Further bottle ageing before sale.

Sensory profile Powerful ruby red with a garnet rim. The well-developed nose has overtones of violet, plum, clove, nutmeg and cedar wood. The palate reveals the wines elegance, succulent extracts and a full structure of smooth tannins. A vibrant richness of flavour leads to a finish with attractive hints of wild berries and sweet spices. Perfect with T-bone steaks or hare with truffles.
Serving temperature 18 °C in large glasses which enable you to appreciate Sangiovese depth and elegance to the full.
