Vine management Tillage, partial weeding, pest management, thinning, hand picking, sorting in the vineyard before harvest

Winemaking Strict selection at the winery, steeping whole berries. Enzymage, addition of yeast, cold maceration for a week, daily punching down, final hot maceration.

Breeding 12 months in oak barrels, of which 1/3 new wood, malolactic fermentation in casks, then assembled in stainless steel tanks for 3 months. light filtering 5 microns to provide more shine and aromatic purity.

Bottling process At Domaine we practice the great ancient tradition of bottle corking.

Tasting Very strong, deep, black cherry, complex nose, subtle on the black fruit aromas (blackcurrant, blackberry, blueberry...) truffles and licorice. As we age fur flavors, musk. Powerful in the mouth, very present but fine tannins and a good length.

Pairing Wine Game, red meat in sauce, spicy food, strong cheeses.

Serving temperature 60° F (16° C)

Serve ideally between 7 to 12 years.
