In the heart of the Sauternes region, the quality of the terroir, combined with the microclimate, creates exceptional conditions for the production of the famous White Wine Sauternes. 

This appellation’s magic resides in the action of Botrytis cinerea, a microscopic fungus more frequently referred to as « noble rot ». 

When Botrytis appears in autumn, it transforms grapes by reducing their volume, as well as concentrating lovely candied fruit flavours and floral aromas.

At Château de Fargues, nature and man work together to produce perfectly ripe grapes subject to the capricious effects of Botrytis cinerea.

This microscopic fungus concentrates and multiplies the aromas found in the two grape varieties grown at the château, while reflecting the unique characteristics of its terroir. 

The two grape varieties at Château de Fargues are  Semillon (80%), which gives richness, roundness and structure to the wine, and Sauvignon Blanc (20%) which contributes to wonderful aromas and freshness.

At Fargues, the harvesting method entails passing through the vineyard a number of times to select only the grapes or part of bunches that have been attacked by “noble rot”.

Such extravagance leads to very small yields, one vine generally producing only a single glass.

In addition, the wine matures for a long time in barrels and bottles before it is ready.

Such is the price of quality.
